March & May began the way most good things do — with a deep love of craft, a sense of place, and a lot of chocolate.
Born on the Islands
St. Simons Island is the kind of place that gets into your bones. The salt air, the ancient oaks, and the slower pace shape everything we make. March & May was born here, and this island is woven into every batch. Our story, though, began with a single cacao pod in St. Lucia. On a tour of a small cacao estate, we learned how chocolate is really made—from harvesting ripe pods to fermenting, roasting, grinding, and finally tasting chocolate made by hand. Until that moment, we had never thought much about where chocolate actually came from. We discovered that what we casually unwrap in a candy bar begins as fruit growing beneath the shade of tropical trees, cared for by generations of farmers and transformed through remarkable craftsmanship.We came home inspired—and just a little obsessed. What began as a vacation experience became countless hours of learning, experimenting, and refining recipes in our own kitchen. Today, every bar is made in small batches on St. Simons Island, Georgia with carefully sourced cacao, quality ingredients, and a deep appreciation for the journey from tree to chocolate.

Every product we make starts with the best ingredients we can source — real butter, fresh pecans, single-origin cacao. What you taste is exactly what went in.
Our process is slow by design. We temper chocolate by hand, watch every batch, and package each piece ourselves. It takes longer. It's worth it.
